I would’ve taken a better photo but honestly didn’t think it’d turn out well considering it’s made entirely from I’m Too Lazy To Go Grocery Shopping. Recipe below:
Makes: 2 servings
Time: 60 minutes (due to Barley cook time)
Level: Super Simple (like anything I ever post)
— 1/2 cup Bob’s Red Mill Pearl Barley
— 1/2 cup Sprouts frozen mixed veggies (I like the mix with edamame, carrots, corn, and green beans)
— 1/2 Onion, chopped in 1/4 strips
— 5 Kale leaves removed from stems, rough chopped/torn approx. 2″ x 2″
— 2 Celery stalks chopped approx. 1/2 ” x 1/2 ”
— 1 Vegetarian Boullion Cube (I like the one by Knorr)
— Olive Oil
— Salt and Pepper to taste
1. Wash and cook Barley according to package directions. The full cook time is 50-60 minutes, so set your timer to 30 minutes. You will add in Vegetagles, Celery, Boullion at half-time.
2. While Barkley cooks, sauteé Onions in Olive Oil. When fragrant, add Kale. Turn Kale using tongs to coat with Olive Oil and Onions. Add approx. 1/3 cup Water so that the Kale begins to cook down. Season with Salt and Pepper. Cook until wilted.
3. After 30 minutes, crush and mix in Boullion Cube to the Barley while it’s still cooking. Add Frozen Veggies and Celery. Let it cook the remaining 20-30 minutes until all water is absorbed.
4. Fluff Barley when done and mix in Kale.
I like the title. Blunt, yet intriguing. :p
